Aussie Beef Burger with “The Lot”

Ingredients
Makes 2 burgers
- 300g beef mince
- 1 onion
- mixed lettuce leaves
- 1 tomato
- 4 slices cheese
- 2 eggs
- 4 bacon rashers
- tinned, sliced pineapple
- sliced, pickled beetroot
- your choice of sauces
- salt, pepper & dry mixed herbs
- garlic powder

Method
- Slice the onion in half and slice each half into thin pieces and put aside.
- In a bowl put the minced beef, 1 teaspoon mixed herbs, half a teaspoon garlic powder and some salt and pepper and combine. Test the taste by quickly microwaving or pan-frying a small amount of the mince. Adjust seasoning as needed.
- Form the beef into even patties about 2cm thick and set aside.
- Start cooking off the onions. Oil a hot pan and add the onions. Add a tablespoon of butter and cook until golden in colour. Drain on a piece of paper towel to remove excess oil.
- While onions are cooking, put bacon rashers onto tray and into the oven at gas mark 6/200ºc/390ºF.
- Once the onions have finished cooking, use the pan to start the burger patties. Cook the burgers evenly on each side for a couple of minutes.
- Check the bacon and flip. Add the burger patties to the tray and top with cheese. Put the tray back into the oven for 5-7 minutes.
- Fry the eggs, seasoning them with salt and pepper.
- Slice the tomato, prepare the lettuce and open the tinned pineapple and pickled beetroot. Slice the burger buns in half and butter both sides if desired.
- Remove burgers and bacon from the oven. Start building your burgers in whatever order you prefer!
- Serve with some sort of napkin – it gets messy!
