Bobbi’s Brilliant Bean Burritos

Ingredients

Makes 4 serves

  • 1 medium brown onion, finely diced
  • 1 tsp minced garlic
  • 1.5 tsp tomato paste
  • 2 tsp paprika
  • 1 tsp ground cumin
  • quarter tsp cayenne pepper
  • half tsp mixed dry herbs
  • 400g tin green lentils, drained
  • 400g tin red kidney beans, drained
  • half cup of tomato passata
  • salt and pepper
  • 8 wraps

Fillings (all optional):

  • lettuce
  • tomatoes
  • rice
  • cucumber
  • cheese
  • peppers
  • jalapeños
  • olives
  • hummus

Method

  1. Place a pan over medium-high heat and add some oil. Add the onions and garlic and cook until onion starts to turn clear. Add the tomato paste, stir in and continue cooking for a few minutes while stirring.
  2. Add the spices and herbs and mix in, then add the lentils and beans and cook them for a minute or two.
  3. Add the passata and a small amount of water if needed. Simmer while stirring occasionally for about 5 minutes until all heated through.
  4. Season with salt and pepper and additional chilli if desired and remove from the heat.
  5. Serve while hot in wraps with your choice of filling.
