Creamy Peppercorn Sauce

Makes 2 serves

  • half a brown onion
  • 1 tsp butter (leave out for vegan version)
  • 1 tbsp tinned/jarred green peppercorns or dry mixed peppercorns
  • 1 tsp crushed black pepper
  • half a tsp dry mixed herbs
  • 250ml single cream or soy cream
  • salt

Method

  1. Finely dice the onion and add to a hot, oiled pan on high heat. Add the butter (leave out if making the vegan version) and sweat onions for a minute or so.
  2. This sauce works best when using tinned or jarred green peppercorns, but if you don’t have them, dry mixed peppercorns will work. Add the peppercorns, the crushed black pepper and the herbs to the onions and continue cooking for another minute.
  3. Add the cream and allow it to reduce over high heat, stirring occasionally.
  4. Season with salt and serve when at the desired consistency.
