Lamb Rack with Sweet Potato Mash

Ingredients

Serves 2

  • approx. 500-600g rack of lamb
  • half tsp dried rosemary
  • half tsp dried thyme
  • quarter tsp salt
  • quarter tsp pepper

Sweet potato mash

  • 2 medium sweet potatoes
  • 30g butter
  • 30ml cream
  • salt and pepper to taste

Method

  1. Preheat the oven to 200°c (gas mark 6 / 400°f).
  2. Peel and cut the potatoes into large chunks and boil them for 10-15 minutes.
  3. Cut the lamb rack into two portions and rub each side with the rosemary, thyme, salt and pepper.
  4. Heat a frying pan over high heat with a small amount of oil. Seal each side of the lamb racks, starting with the fatty side, until all sides are golden brown. Place the lamb onto a tray and put into the oven. Depending on how well done you want the lamb, cook it for 10-15 minutes.
  5. While the lamb is in the oven, drain the sweet potatoes, then add the butter and cream and mash together until smooth. Season to taste with salt and pepper.
  6. Remove the lamb from the oven and let it sit on the tray for a few minutes to rest before serving. Serve with the sweet potato mash and your choice of other vegetables and gravy.
