Moroccan-Spiced Lamb Wraps

Ingredients

Makes 2 wraps

  • 250g lamb mince
  • 2 teaspoons moroccan spice mix
  • 1 small carrot
  • quarter of a red onion
  • quarter of a yellow pepper
  • quarter of a cucumber
  • 1 tomato
  • mixed lettuce
  • 2 wraps
  • greek yoghurt
  • 10 leaves of fresh mint
  • mint sauce
  • salt and pepper

Method

  1. Slice the yellow pepper, cucumber and tomato. Finely slice red onion. Grate carrot and set all aside.
  2. Put 3 tablespoons of greek yoghurt into a bowl. Finely slice mint leaves and add to yoghurt. Add 2 teaspoons of mint sauce. Mix together well and set aside.
  3. Put lamb mince into a bowl and add spices, salt and pepper and mix together well. Cook small amount of mince (in pan or microwave) to test flavour and add spices, salt or pepper as needed.
  4. Form lamb into 4 sausage shapes about 10cm in length each and flatten to half-thickness.
  5. Heat small amount of oil in a pan. Over medium heat, add lamb and cook first side for about 5 minutes. Once nicely browned, turn over and cook other side for another 5 minutes or until cooked through. Place cooked lamb onto paper towel to remove excess oil and fat.
  6. Put wraps onto flat surface and add mixed lettuce, peppers, cucumber, tomato, red onion, carrot, lamb and mint yoghurt as a line across the centre of the wrap in any order you choose. Roll up and enjoy!
