Mozzarella & Semidried Tomato Pasta

Ingredients

Makes 2 serves

  • 2.5 cups dry pasta
  • 60g pine nuts
  • 200g semidried tomatoes
  • 125g drained mozzarella
  • 15-20 fresh large basil leaves
  • minced garlic
  • 50g butter
  • salt & pepper

Method

  1. Bring a pot of water with a teaspoon of salt in it to the boil.
  2. Once boiling, add pasta to the water and cook for 10-12 minutes until pasta is al dente.
  3. While pasta is cooking, use oil from semidried tomatoes in a large heated pan. Add garlic and pine nuts and lightly brown them. Add the butter and melt, then add in the semidried tomatoes and continue cooking over medium heat.
  4. Drain the pasta and add to the pan with the tomatoes and pine nuts. Stir together.
  5. Rip basil leaves into small pieces and mix into pasta. Keep some nice ones for garnishing if desired.
  6. Add salt and pepper to taste.
  7. Serve hot with roughly torn fresh mozzarella over the top and basil leaf garnish.
