Mozzarella & Semidried Tomato Pasta

Ingredients
Makes 2 serves
- 2.5 cups dry pasta
- 60g pine nuts
- 200g semidried tomatoes
- 125g drained mozzarella
- 15-20 fresh large basil leaves
- minced garlic
- 50g butter
- salt & pepper

Method
- Bring a pot of water with a teaspoon of salt in it to the boil.
- Once boiling, add pasta to the water and cook for 10-12 minutes until pasta is al dente.
- While pasta is cooking, use oil from semidried tomatoes in a large heated pan. Add garlic and pine nuts and lightly brown them. Add the butter and melt, then add in the semidried tomatoes and continue cooking over medium heat.
- Drain the pasta and add to the pan with the tomatoes and pine nuts. Stir together.
- Rip basil leaves into small pieces and mix into pasta. Keep some nice ones for garnishing if desired.
- Add salt and pepper to taste.
- Serve hot with roughly torn fresh mozzarella over the top and basil leaf garnish.
