Pulled Jackfruit Burgers

Ingredients
Makes 4 burgers
- 400g tinned jackfruit (250g drained weight)
- half a large red onion, sliced
- 1 tsp butter or margarine
- 3 tbsp BBQ sauce
- 4 buns
- lettuce
- tomatoes
- cheese
- 1 tsp BBQ spice mix (mixture of the following)
- onion powder
- paprika
- ground coriander
- garlic powder
- cayenne pepper
- dried basil
Method
- Open the tin of jackfruit and drain in a colander. Using your hands or a fork, pull the jackfruit strands apart and then let it sit in the colander to drain further.
- Slice the tomato and cheese as well as preparing the lettuce and burger buns and put aside.
- Heat approximately half a tablespoon of vegetable oil in a pan on high heat. Toss the sliced onion into the pan when hot and begin to caramelise.
- Add the butter/margarine to the onions and cook for about 2 minutes. When the onions start to brown on the edges, add the jackfruit into the pan and cook for a further 2-3 minutes.
- Mix the BBQ spice mix through the jackfruit and continue cooking for a further 2 minutes, then add the BBQ sauce to the jackfruit and toss through. Once the jackfruit is coated and is sticky, remove from the heat.
- Finally, assemble your burgers and enjoy!
