Pulled Jackfruit Burgers

Ingredients

Makes 4 burgers

  • 400g tinned jackfruit (250g drained weight)
  • half a large red onion, sliced
  • 1 tsp butter or margarine
  • 3 tbsp BBQ sauce
  • 4 buns
  • lettuce
  • tomatoes
  • cheese
  • 1 tsp BBQ spice mix (mixture of the following)
    • onion powder
    • paprika
    • ground coriander
    • garlic powder
    • cayenne pepper
    • dried basil

Method

  1. Open the tin of jackfruit and drain in a colander. Using your hands or a fork, pull the jackfruit strands apart and then let it sit in the colander to drain further.
  2. Slice the tomato and cheese as well as preparing the lettuce and burger buns and put aside.
  3. Heat approximately half a tablespoon of vegetable oil in a pan on high heat. Toss the sliced onion into the pan when hot and begin to caramelise.
  4. Add the butter/margarine to the onions and cook for about 2 minutes. When the onions start to brown on the edges, add the jackfruit into the pan and cook for a further 2-3 minutes.
  5. Mix the BBQ spice mix through the jackfruit and continue cooking for a further 2 minutes, then add the BBQ sauce to the jackfruit and toss through. Once the jackfruit is coated and is sticky, remove from the heat.
  6. Finally, assemble your burgers and enjoy!
