Ingredients

Makes approx. 500g

  • 4 large red onions (about 700g)
  • 5 tbsp oil
  • 100ml dry red wine
  • 150ml balsamic vinegar
  • 75g soft brown sugar
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • quarter of a tsp chilli powder
  • half a tsp finely ground pepper
  • half a tsp salt

Method

  1. Peel the onions and cut them in half, then thinly slice them.
  2. Heat a large pot over high heat and add the oil. Add the onions to the pot and start cooking them.
  3. Add the salt, pepper, thyme, oregano and chilli powder to the onions and mix through. Continue cooking the onions until they start to brown.
  4. Add the sugar and stir through until it dissolves.
  5. Add the wine and balsamic vinegar, then turn the heat down to low and let the mixture reduce until it becomes sticky. Make sure to stir it occasionally to prevent it from burning.
