Stir Fry with Peppered Beef

Ingredients

Makes 2 serves

  • half a red onion
  • half each of a red and a yellow pepper
  • 10 mange tout
  • 5 tenderstem broccoli
  • 2 spring onions
  • 3 leaves of savoy cabbage
  • 250g rump steak
  • 1 tsp minced ginger
  • 1 tsp minced garlic
  • 1 tbsp soy sauce
  • 1 tbsp sweet chilli sauce
  • 1 tbsp sweet soy sauce
  • 200g of dry thin noodles
  • 1.5 tbsp sesame oil
  • salt and cracked black pepper

Method

  1. Finely slice the red onions, peppers and spring onions. Top and tail the mange tout, then cut them and the broccoli in half. Set aside.
  2. Take the cabbage leaves and cut out the bitter white stem, thinly slice the leaves and set aside.
  3. Season both sides of the steak with salt and cracked black pepper. Oil a hot pan and seal each side of the steak for a few minutes, then place on a tray and set aside.
  4. Bring a pot of water to the boil and add the noodles. Cook them for 2-3 mins.
  5. While the noodles are cooking, heat a large pan or wok with the sesame oil. When the pan is very hot and starting to smoke, add the onions and toss. Cook for about a minute.
  6. Put the steak into the oven at gas mark 8/230°c/450°f.
  7. Add the peppers, broccoli and mange tout to the pan and toss, then add the garlic and ginger to the vegetables and continue to cook for a minute or so. 
  8. Add the spring onions and sliced cabbage to the pan and toss through. Pour the soy, sweet soy and sweet chilli sauces into the pan and mix through.
  9. Drain the noodles when cooked, add them to the vegetables and toss, making sure to coat everything with the sauce. Cook for a further minute then remove from the heat.
  10. When the steak is cooked to your liking, remove from oven and slice into thin strips. Serve stir fry with steak strips on top and garnish with a coriander leaf.
