Sweet Potato Salad

Ingredients

Makes approx. 4 serves

  • 400g sweet potatoes
  • 400g baby new potatoes
  • 1 spring onion
  • half a cup of mayonnaise
  • 1 tbsp cream
  • 1 tsp Dijon mustard
  • half a tsp cumin
  • salt and pepper

Method

  1. Peel and dice the potatoes. Boil until soft but firm. Drain and leave to cool to room temperature.
  2. Finely chop the spring onion and add to the cooled potatoes. Add the rest of the ingredients, seasoning to taste with the salt and pepper.
  3. Mix together and keep chilled until ready to serve.
