Sweet Potato Salad

Ingredients
Makes approx. 4 serves
- 400g sweet potatoes
- 400g baby new potatoes
- 1 spring onion
- half a cup of mayonnaise
- 1 tbsp cream
- 1 tsp Dijon mustard
- half a tsp cumin
- salt and pepper

Method
- Peel and dice the potatoes. Boil until soft but firm. Drain and leave to cool to room temperature.
- Finely chop the spring onion and add to the cooled potatoes. Add the rest of the ingredients, seasoning to taste with the salt and pepper.
- Mix together and keep chilled until ready to serve.
