Simple Thai Green Curry with Cod

Ingredients
Makes 4 serves
- 1 brown onion
- 8 stems tenderstem broccoli
- 150g sugar snaps
- 800ml coconut milk
- 1-2 tbsp Thai green curry paste
- 3 tsp lime juice
- 1 tsp minced ginger
- 1 tbsp soy sauce
- handful of fresh coriander
- 4 cod fillets
- salt and pepper
- boiled rice for 4 people

Method
- Dice the onion into small dice and cut the broccoli into small pieces. Cut the sugar snaps into halves and finely chop the coriander.
- Put a pot over high heat and add some oil. Add the onions and start sweating them. After a minute, add the ginger and stir in, then add your desired amount of Thai green curry paste and mix in.
- Add the green veggies and cook for a minute, then add the soy sauce and continue cooking for another minute.
- Add the coconut milk to the pot and stir through. Season with pepper and add the lime juice.
- Turn the heat down and leave it to simmer for 10-15 minutes.
- Season the cod fillets with salt and pepper and place them into a hot, oiled pan. Fry them on both sides until fully cooked.
- Add the coriander to the sauce and stir through. Serve the fish and the green curry sauce over some boiled rice.
