Simple Thai Green Curry with Cod

Ingredients

Makes 4 serves

  • 1 brown onion
  • 8 stems tenderstem broccoli
  • 150g sugar snaps
  • 800ml coconut milk
  • 1-2 tbsp Thai green curry paste
  • 3 tsp lime juice
  • 1 tsp minced ginger
  • 1 tbsp soy sauce
  • handful of fresh coriander
  • 4 cod fillets
  • salt and pepper
  • boiled rice for 4 people

Method

  1. Dice the onion into small dice and cut the broccoli into small pieces. Cut the sugar snaps into halves and finely chop the coriander.
  2. Put a pot over high heat and add some oil. Add the onions and start sweating them. After a minute, add the ginger and stir in, then add your desired amount of Thai green curry paste and mix in.
  3. Add the green veggies and cook for a minute, then add the soy sauce and continue cooking for another minute.
  4. Add the coconut milk to the pot and stir through. Season with pepper and add the lime juice.
  5. Turn the heat down and leave it to simmer for 10-15 minutes.
  6. Season the cod fillets with salt and pepper and place them into a hot, oiled pan. Fry them on both sides until fully cooked.
  7. Add the coriander to the sauce and stir through. Serve the fish and the green curry sauce over some boiled rice.
