Ingredients
Makes 6 medium pancakes
- 135g plain flour
- 2 tbsp caster sugar
- 1 tsp baking powder
- half a tsp of salt
- 130ml milk
- 1 egg, lightly beaten
- 2 tbsp vegetable oil
- half a tsp vanilla paste

Method
- Sift the flour, sugar, baking powder and salt into a mixing bowl.
- In a separate bowl or jug, add the milk, egg, oil and vanilla paste and whisk together.
- Add the wet ingredients to the dry ingredients and mix together with the whisk until the batter is smooth.
- Heat a non-stick pan over medium heat and add a small amount of oil and butter. The oil will help prevent the butter from burning. Ensure the pan has a good coating of oil and butter and add a ladle of the batter once the pan is hot.
- Cook on one side for a minute or two until the pancake starts bubbling on the top and no longer sticks to the bottom of the pan. Flip the pancake and cook for another minute until golden brown, then remove from the pan.
- Repeat the cooking process until all the batter is used. If necessary, the cooked pancakes can be kept warm by placing them into the oven at a very low temperature.
- Serve hot with your choice of toppings!
