Ingredients

Makes approx 30 biscuits

  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup desiccated coconut
  • 3/4 cup caster sugar
  • 125g butter
  • 1 tablespoon golden syrup
  • 1 teaspoon bicarbonate soda
  • 3 tablespoons water

Method

  1. Preheat oven to gas mark 3 / 160°c / 320°f.
  2. Mix oats, flour, coconut and sugar together in a large bowl.
  3. Melt the butter and golden syrup together.
  4. Stir the bicarbonate soda into the water and add to the butter.
  5. Add the butter mix to the dry ingredients and combine well.
  6. Shape mixture into small balls and place on a tray lined with baking paper. Ensure there is about 4-5cm between each ball. Flatten balls gently until about half thickness.
  7. Place into the oven for about 15-20 minutes until golden brown.
  8. Remove from oven and leave to cool before eating.
