Choc Chip Hot Cross Buns

Ingredients
Makes 8 large buns
- 500g strong white bread flour
- 50g caster sugar
- 2 teaspoons mixed spice
- half teaspoon salt
- 50g softened butter
- 7g “easy-bake” yeast (yeast that doesn’t need to be activated beforehand)
- 200g chocolate chips
- 200ml milk
- 2 eggs
For crosses & glaze
- 4 tablespoons plain flour
- water
- honey or golden syrup

Method
- Mix flour, sugar, mixed spice and salt together in a mixing bowl.
- Put the milk on the stove over a low heat to begin gently heating.
- Add butter to the flour mix and rub in with fingers, then add yeast and stir in.
- When milk is hot, but still cool enough to put your finger in for a few seconds, remove from heat. Add the eggs and mix together.
- Add the milk and egg mix into the flour and begin mixing together.
- Add the chocolate chips and continue mixing until all ingredients are thoroughly combined.
- Flour a bench and tip dough out. Form dough into a rough log and cut into 8 even pieces. Shape the pieces into round, slightly flat buns.
- Cover 2 trays with baking paper and place the buns onto them, leaving several centimetres between them.
- Cover loosely with cling film and leave in a warm place for about an hour to rise by half their size again.
- Once risen, make the paste for the crosses. Mix the plain flour with some water until a smooth paste forms. Pipe the paste onto the buns in crossed lines.
- Brush honey or golden syrup on top of the buns and put into the oven for 12-15 minutes at gas mark 7 / 220°c / 425°f.
Perfect when just out of the oven, or toasted the day or two after.
