Cinnamon Sugar Doughnut Cupcakes

Ingredients

Makes 12

  • 240g plain flour
  • 140g caster sugar
  • 2 tsp baking powder
  • half tsp salt
  • 56g butter
  • 200ml milk
  • 2 eggs
  • 1 tsp vanilla essence

Cinnamon sugar dusting:

  • 2 tbsp caster sugar
  • half tsp cinnamon
  • 1 tsp butter

Method

  1. Preheat the oven to 175°c / gas mark 4 / 350°f.
  2. In a medium mixing bowl, mix the flour, sugar, baking powder and salt together.
  3. In a small pot, melt the butter and then immediately remove it from the heat. Add the milk, eggs and vanilla extract to the butter and whisk together.
  4. Add the wet ingredients to the dry ingredients and whisk until just combined – don’t over mix the batter.
  5. Grease a muffin tray and spoon the mixture into the moulds, to about three-quarters full. Put the tray in the oven and bake for about 18 minutes.
  6. Remove from the oven and gently run a knife around the edges of the cupcakes to remove them from the tin. Place them onto a cooling rack.
  7. For the cinnamon sugar dusting, combine the sugar and cinnamon in a small bowl, making sure to thoroughly mix them. Melt the butter in a pot.
  8. Use a pastry brush to brush some melted butter over the top of one or two cupcakes at a time, then dip the buttered cupcakes into the cinnamon sugar mix. Repeat until all cupcakes are dusted.
  9. Best enjoyed while still warm!
