Cinnamon Sugar Doughnut Cupcakes

Ingredients
Makes 12
- 240g plain flour
- 140g caster sugar
- 2 tsp baking powder
- half tsp salt
- 56g butter
- 200ml milk
- 2 eggs
- 1 tsp vanilla essence
Cinnamon sugar dusting:
- 2 tbsp caster sugar
- half tsp cinnamon
- 1 tsp butter

Method
- Preheat the oven to 175°c / gas mark 4 / 350°f.
- In a medium mixing bowl, mix the flour, sugar, baking powder and salt together.
- In a small pot, melt the butter and then immediately remove it from the heat. Add the milk, eggs and vanilla extract to the butter and whisk together.
- Add the wet ingredients to the dry ingredients and whisk until just combined – don’t over mix the batter.
- Grease a muffin tray and spoon the mixture into the moulds, to about three-quarters full. Put the tray in the oven and bake for about 18 minutes.
- Remove from the oven and gently run a knife around the edges of the cupcakes to remove them from the tin. Place them onto a cooling rack.
- For the cinnamon sugar dusting, combine the sugar and cinnamon in a small bowl, making sure to thoroughly mix them. Melt the butter in a pot.
- Use a pastry brush to brush some melted butter over the top of one or two cupcakes at a time, then dip the buttered cupcakes into the cinnamon sugar mix. Repeat until all cupcakes are dusted.
- Best enjoyed while still warm!
