Easy Sweet or Savoury Scones

Ingredients
Makes approx. 6 scones
- 225g (8oz) self raising flour
- 40g (1.4oz) softened butter or margarine
- 1 and a half tbsp caster sugar (for sweet scones)
- pinch of salt
- 110ml (3.7 fl. oz) milk
Suggestions for sweet scones:
- half cup of dried fruit
- half cup of dried cherries
- 1 tsp cinnamon
- half cup of choc chips
Suggestions for savoury scones:
- cheese and onion
- bacon and cheese
- semidried tomatoes
- half cup of olives

Method
- Preheat the oven to 220°c/ gas mark 7/ 430°f.
- Sift the flour into a mixing bowl and rub in the butter with your fingertips until it has a sandy texture and all butter is incorporated.
- Stir in the sugar and the salt (if making savoury scones, leave out the sugar).
- Add any extra ingredients into the flour mix, such as dried fruit or cheese, etc, then add the milk and mix through with a fork.
- Flour a bench and tip the dough out onto the floured surface. Knead the dough very briefly until smooth, then roll it out to about 2.5-3cm (about 1 inch) thickness.
- Cut the dough using a round pastry cutter. Dip the cutter in flour first to prevent the dough from sticking to it. Place the cut scones onto a floured tray.
- Brush the top of the scones with some milk and put into the oven for about 15 minutes. The scones should rise and become golden brown.
- Remove from the oven and leave to cool. Serve either warm or cold with your choice of butter, jam, cream, etc!
